I first came across Nelson when he was the Head Pastry chef at Galvin Windows ,where he run the very busy  section and  I saw his talent .
when it came to expanding our Group -5 sites in one year ,Nelson was the perfect Executive pastry chef for the role ,throughout the setting up of the new sites and training of the respective teams in each site ,Nelson was very dedicated ,hard working and delivered what was required and went above to improve the standards .
