MY BACKGROUND

How I Got Here

I am from Madeira  , a beautiful  island in the Atlantic  ocean ,part of Portugal  a nation of travellers  .

Being true to our nature of exploring,

I moved to Uk  in 1997  ,firstly in Eastbourne where my family lived .

My Granddad was the Head Sommelier at The Grand Hotel there and he got me a

Apprenticeship and first got my taste for  fine dining at the Mirabelle  working with Marc Wilkinson .

4 years later I went to Cambridge where

I met Daniel Clifford ,what turned out to be amazing due to being part of winning our first star for Midsummer House.

It opened my eyes and made me hungry for more .

From there I went to work at Latymer in Penny hill Park Hotel with Marc .

He then asked me to help him set up Fraiche in the Wirral ,Merseyside .

It was my first opening and we were jack of all trades ,A insight into setting up a restaurant from scratch .

I then moved closer to home near Gatwick where I ran the kitchen at Alexander house hotel and set up the events kitchen and the new Spa .

I met my wife whilst there and I moved to London to be with her .

Being new to London I started at Clos Maggiore with Marc Marcellin .

It was  great  working with such a chef that allowed  me be creative .

We made a great team for the 6 years there and he's one of my closest friends .

Wanting to hone my skills further I went to work At the Ritz .

From there I moved to Galvin windows ultimately becoming the Executive pastry chef and opening 5 new sites in 1 year.

I am currently at South place overseeing all pastry including the 1 Michelin  Star Angler restaurant .
